1 (12 oz) jar medium salsa
1 (8 oz) can no-salt added tomato sauce
1 (15-16 oz) can black beans (rinsed and drained)
1 (15-16 oz) can no salt added whole kernel corn (drained)
1/2 c packed fresh cilantro
4 (8"-10") flour tortillas
6 oz 2% mexican blend cheese (or reduced fat monterey jack cheese)
In a small bowl, mix the salsa and tomato sauce. In a medium bowl, mix the rinsed and drained black beans, the drained corn and the cilantro.
Place 1 tortilla on the cookie sheet. Spread 1/3 of the salsa mixture and top with 1/3 of the black bean mixture and 1/3 of the cheese. Repeat layering 2 more times, ending with last tortilla.
Bake pie until cheese melts and filling is heated through, 10-12 minutes. Makes 4 main dish servings
