White Bean Aoli (from Veganomicon)

Ingredients

    1 can of white or navy bean
    Pinch of salt and pepper to taste
    2 tablespoons of fresh lemon juice
    1/4 olive oil

Directions

Rinse the beans and then blend them with the lemon juice, salt and pepper.
Heat olive oil on the stove on low to medium and heat the garlic for 3 minutes, just till it's warm and fragrant, not burnt.
Add the olive and garlic to the blended beans and mix until creamy consistency.
Great on sandwiches, tofu cakes, as a dip for veggies. Sometimes I add somemore water or soymilk to thin it out to make more of a sauce than a dip or spread.
