Doritos Taco Salad

Introduction

This is a great salad for summertime - quick and easy and light. This is a great salad for summertime - quick and easy and light.
Number of Servings: 4

Ingredients

    3 oz Doritos Chips (I prefer the Nacho Cheese flavor)
    1 C. Kidney Beans (dark or light)
    1 C. Shredded Lowfat Cheese
    3/4 lb. Ground Turkey
    1 C. Tomato
    4 C. Romaine Lettuce
    1 packet low sodium Taco Seasoning
    Light French or Catalina Salad Dressing as needed

Directions

Brown the ground turkey in a skillet on medium heat until brown. While the turkey is browning, chop tomato and lettuce (I usually buy the pre-chopped stuff) for salad.

After turkey browns, add packet of Taco Seasoning. I usually skip the directions on the packet, as it makes the meat and salad watery and less robust.

Crush Doritos into smaller pieces. Combine lettuce, tomatoes, kidney beans and seasoned turkey with the Doritos. Mix until combined, then add cheese. Dress to taste.

Usually serves 4-5.
