Mandarin Rice Pilaf

Introduction

A nutty citrusy side dish. A nutty citrusy side dish.
Number of Servings: 8

Ingredients

    One 6 oz. box of Uncle Ben's Long Grain & Wild Rice
    1/2 cup diced onion
    1/2 cup diced celery
    1 tsp. Olive oil
    4 oz. can mushrooms (reserve the liquid)
    14 oz. Chicken Broth
    4 oz. can mandarin oranges
    1/2 cup slice, roasted almonds

Directions

Saute onions, celery and drained mushrooms (reserve liquid) in olive oil for 5 minutes.

Add mushroom liquid and seasoning packet from rice.

Bring to a boil then add Rice and Chicken broth. Bring back to a boil and simmer for 25 minutes.

Fluff rice then toss with oranges and almonds before serving.
