Hungry Girl Jelly- Filled Cupcakes

Introduction

I edited this recipe with my favorites but you may by all means substitute preserve for jam or jelly, or flavors of the preserve and cake mix as you wish.

Number of Servings: 1

Ingredients

    2 Cups Betty Crocker Yellow Cake Mix
    1/3 C No Sugar Added Applesauce
    1/4 Cup Sugar Free Smuckers Strawberry Preserve
    1/2 Tsp Baking Powder

Directions

Preheat Over to 350 Degrees.

In a large bowl, combine cake mix and baking powder, then add applesauce and 1 cup of water. Stir until well blended.

Place muffin cup liners in a 12 cup muffin pan and evenly distribute cake mixture between them. Bake for 20-22 minutes or until brown.

Place preserves in the bottom of a sandwich bag and cut a small hole in the bottom corner.
Once muffins are done, use a knife to poke a small hole in the middle, top of each cupcake. Using the bag of preserves, squeeze even amounts into the holes you made :) Then allow to cool and enjoy!

They're amazing!
Makes 12 cupcakes.
