Crockpot Chicken Tomato Stew

Introduction

Fail proof chicken stew with tons of veggies that you can throw into the crockpot, go to work and have a great dinner when you get home. Fail proof chicken stew with tons of veggies that you can throw into the crockpot, go to work and have a great dinner when you get home.
Number of Servings: 10

Ingredients

    3 chicken breasts cut into bite sized chunks (drumsticks work well too)
    2 potatoes chopped
    1/2 onion chopped
    1 zucchini chopped
    1 cup of frozen broccoli florets*
    1 cup frozen chopped okra*
    1 celery stalk chopped
    1 carrot chopped
    1 8 oz. can tomato sauce
    1 14.5 oz can stewed tomatoes
    2 cans of water using tomato sauce can
    1-2 minced cloves of garlic
    1 bay leaf
    salt, pepper, Italian seasoning to taste

    * you can use fresh as well

    You can use whatever veggies you want and change up the quantities here as well. I usually add green beans but didn't have any and don't like carrots or onions.

Directions

Put the chicken into the crockpot first, followed by potatoes and any other root veggies. Put everything else in except the spices and mix the everything else part. Doesn't have to be well mixed. Add bay leaf. Set on low and cook for 8 hours. Put the seasonings in about 10-20 minutes before serving.
