Almost Fat-Free Blueberry Bran Muffins

Introduction

This is an adaptation of my favorite bran muffin recipe. Using blueberries instead of raisins boosts the anti-oxidant power of these muffins, and swapping out the oil for applesauce cuts the fat to almost nothing! Ingredients

    1/2 cup unsweetened applesauce
    1/2 cup brown sugar
    1 large egg
    1 tsp vanilla extract
    1 cup all-purpose flour
    1 tsp baking soda
    1 tsp cinnamon
    1/4 tsp salt
    1 cup buttermilk (or plain yogurt)
    1-1/2 cups natural bran
    1 cup blueberries

Directions

Preheat the oven to 375 degrees F. Line a standard-sized muffin pan with paper muffin cups.

In a large bowl, whisk together the applesauce, brown sugar, and egg until smooth. In a small bowl, combine the flour with the baking soda, cinnamon and salt. Add the flour mixture to the egg mixture in 2 or 3 portions, alternating with the buttermilk (or yogurt), stirring just until everything is evenly moistened. Stir in the bran and the blueberries.

Spoon the batter into the muffing pan. Bake for 20 to 25 minutes, until a toothpick inserted in the middle of a muffin comes out clean.

Makes 12 muffins.
