No knead bread

Number of Servings: 16

Ingredients

    2 cups white flour
    1 cup whole wheat flour
    1 1/2 teaspoons salt
    1/4 teaspoon yeast
    1 1/2 cups water

Directions

Mix all dry ingredients together. Add water and mix thoughly. Dough will be shaggy and sticky. Cover with plastic wrap and let rise on the countertop for 18 - 20 hours. Top will appear bubbly. Turn out onto floured surface and turn until coated with flour. Let rest, covered, for 15 minutes. Gather into a ball and turn edges under to bottom. Put on a floured cotten towel (not terrycloth) and cover with another cotton towel. Let rise for 2 hours, or until almost double. About 30 minutes before rising is finished, preheat oven and pan at 450 degrees F. Use a heavy lidded container (I use a cast iron chicken fryer or a Pampered Chef covered baker.). When ready to bake, take preheated container out of oven and gently roll dough off of towel into hot pan. Spinkle with a little water and place lid on at once (do this quickly and don't burn yourself). Bake at 450 degrees F for 30 mintues. Remove lid and bake for 15-30 minutes longer, until brown on top. This is delicous, moist bread, and yes, 1/4 teaspoon of yeast is correct!
