Mediterranean Turkey Meatballs

Ingredients

20 oz Jennie-O Extra Lean Ground Turkey
1 c Red Bell Pepper
1 c Chopped Onion
4 oz Crumbled Feta (for added flavor, use Athenos tomato and basil feta)
1 tbsp Olive Oil
1 tsp Greek Seasoning
0.5 tsp Salt
0.75 c Plain Bread Crumbs (feel free to substitute in whole wheat bread, oats, or other grain instead!)
2 Eggs (any size will do)
Directions
Finely chop onion and bell pepper. Heat olive oil in a pan, then sautee onion and bell pepper until the onion has become translucent. Allow to cool for a few minutes then transfer to a bowl. Add turkey, eggs, bread crumbs, Greek seasoning, salt and bread crumbs to the bowl. Make sure feta is finely crumbled (break up further if needed) then add to the bowl. With your hands, combine ingredients until there is an even consistency.
Heat oven to 350 deg F. Prepare two cookie sheets by covering in aluminum foil and spraying with any non-stick cooking spray. Roll meat into approximately 1 inch diameter meatballs. Should make approximately 60 meatballs. Spread out on cookie sheets and bake for 20-25 minutes, or until cooked through and slightly browned on top.
