Easy Peach Cobbler

Introduction

This is my fav easy cobbler recipe - the dough is a biscuit-style, no rolling out required. When my hubby brings home fresh Texas peaches, this is the recipe I grab because I just can't wait! Obviously you can substitute Splenda for the sugar if that's an issue for you. As for the butter - well, enjoy it on rare occasions and have small servings -it's totally worth it! Ingredients

    Melt 1 stick of butter in 2 1/2 quart baking dish in a 350 oven.

    4 medium peaches, peeled, pitted & sliced
    1/2 c sugar

    Toss peach slices with the sugar and set aside.

    Combine the following in a small bowl:
    1 c AP flour
    3/4 c sugar
    2 t baking powder
    Pinch of salt

    Add 1/2 c milk and stir until just combined. Let the dough sit for 5 minutes to allow the flour to soak up the milk.

Directions

Remove the baking dish from the oven containing the melted butter. Spoon the batter over the butter - do not mix - batter will be very thick. Top with the peach slices. Bake 45-55 minutes until the crust is golden brown and delicious. (Nod to Alton Brown)

Makes 8 generous helpings.
