Introduction

I revised this recipe from "Wholesome Sugarfree Cooking". I couldn't believe how good these were not using ANY sugar or sugar substitute. The original recipe does not include pineapple juice, egg whites (it uses the whole egg), cinnamon, nutmeg or the "Soy Energy Blend". The "Soy Energy Blend" really makes it deeeee-licious!! Ingredients

    1 cup honey
    3/4 cup pineapple juice, apx
    1/2 cup Smart Balance Omega Oil
    4 egg whites
    2 cups whole wheat Flour
    2 cup zucchini, shredded
    1 tsp baking soda
    1 tbsp cinnamon
    2 tsp nutmeg
    2 cups Old Fashioned Oatmeal
    1 cup *Ann's House Soy Energy Blend

Directions

Preheat oven to 350 degrees. Mix in order given. Beat well and pour into sprayed (w/ "Pam" butter-flavor spray) and bake until golden brown. I had to cover w/foil to finish baking the inside. But that might just be MY oven :)
