Barbeque Cheddar Chicken

Introduction

This is a great and flavorful way to dress up baked chicken breast. It's very tasty and very healthy as well, just be sure to not add extra salt, as the cheese and bbq sauce have enough sodium!

Serve with vegetables, baked beans or buttered whole wheat toast.

Number of Servings: 4

Ingredients

    One pound split chicken breast
    1/2 cup bbq sauce (I use Sweet Baby Rays)
    1/2 cup chopped bell pepper
    1/2 cup chopped onion
    crushed red pepper flakes
    one clove garlic, chopped
    2 oz. shredded cheddar (preferably sharp) or colby

Directions

Preheat oven to 350 degrees.

Toss chicken breast in bbq sauce, chopped garlic, and a few shakes of red pepper flakes (depends how spicy you like it). Lay chicken in sprayed oven pan, cover evenly with chopped onion and bell pepper. Place chicken in preheated oven for 25 minutes, or until nearly cooked through.

Sprinkle shredded cheese evenly over chicken breasts and broil on high for 5 minutes, until the cheese is melted and the chicken is cooked through.
