Lemon Chicken (Serves 6)

Ingredients

    2 Lemons
    6 part-boned chicken breasts, no skin
    3 Tbls olive oil
    2 Tbls honey
    2 Tbls dijon mustard
    salt
    pepper

Directions

Finely grate the find of one lemon, then squeeze out its juice. Cut the chicken breasts, lengthwise, to form a deep "pocket". Carefully open the pocket and insert two lemon slices.

In a large bowl, whisk together the oil, honey, mustard seasoning, lemon rind and juice. Add the chicken pieces turning to coat them well. Cover and allow to marinate for up to 2 hours, turning once or twice.

Pre-heat the grill to medium hot. Arrange the chicken on the grill and cook, turning occasionally for about 25 minutes or until golden brown and cooked through.
