Farmhouse Gazpacho

Ingredients

    If it made too much, you could freeze what is left. Yummy fresh cold soup!

    2 cups peeled and diced hothouse cucumber
    2 cups diced red pepper
    2 cups diced tomato
    1/2 cup diced red onion
    2 cups tomato juice
    1/2 cup red wine vinegar
    1/3 cup EVOO
    2 dashes Tabasco

Directions

Put all vegetables in bowl. Combine liquid ingredients and pour over veggies. Season with sat and pepper and toss. Transfer half of mixture to blender or food processor and coarsely puree the contents. Return puree to bowl, stir to combine, cover and chill at least one hour. Serve with extra Tobasco.
