Sweet Pepper Pasta

Number of Servings: 6

Ingredients

    1 lb. angel hair pasta
    2 (14 oz) cans diced tomatoes
    1 tsp salt
    1/4 tsp pepper
    1 tsp dry oregano
    1 tsp. dry basil
    1/4 tsp. dry thyme
    1 large red bell pepper - diced into bite size pieces
    2 large yellow bell peppers - diced into bite size pieces
    3 large garlic cloves, minced
    3 tbsp. olive oil
    1/4 cup white wine
    1/2 cup parmesan cheese

Directions

Cook pasta according to package directions.

In separate pan, saute garlic in olive oil. Add peppers and tomatoes, spices and simmer until peppers are done. Add wine and cook for ten minutes, stirring frequently.

Serve pasta sauce over pasta and pass parmesan cheese.

Makes six 1-cup servings of sauce.
