Introduction

This is the way I like Tacos anymore. Cook up veggies and put the on rice and black beans for a great spanish dish This is the way I like Tacos anymore. Cook up veggies and put the on rice and black beans for a great spanish dish
Number of Servings: 4

Ingredients

    1/2 of a raw onion sliced
    1 zucchni sliced
    2 squash sliced
    1/2 of a red pepper
    1/2 of a green pepper
    1/2 tomoato chopped
    1/4 cup or 1 package of taco seasoning
    1 Tblsp of Olive Oil -Extra Light

Directions

Slice all veggies. Put 1 tablespoon of Olive Oil in a pan and add veggies and taco seasoning and cover.Cook to taste. I add the peppers and tomatoes last. That way the onions are really cooked and peppers are still crunchy. Makes 4 servings.
I like this best served over mexican rice and black beans. May top with cheese and salsa.
