Introduction

This dip is tasty and colorful. It's easy to spice up or down by adjusting a few ingredients. Serve with tortilla chips or use as a topping on tacos and burritos. This dip is tasty and colorful. It's easy to spice up or down by adjusting a few ingredients. Serve with tortilla chips or use as a topping on tacos and burritos.
Number of Servings: 18

Ingredients

    1 can black beans
    1 cup frozen corn
    1 large tomato, chopped
    2-3 avocados, chopped
    3 green onions, chopped
    5 tbls cilantro, chopped fine
    1 cup medium chunky salsa

Directions

1. Drain and rinse black beans
2. Mix beans, corn, tomato, avacado, green onions & cilantro
3. Add salsa & mix.
4. Refrigerate for at least an hour (I usually make it the day before)

Makes about 6 cups (18 - 1/3 cup servings)
