Chicken Cacciatorie

Introduction

Excellent served over brown rice Excellent served over brown rice
Number of Servings: 6

Ingredients

    1 Tbsp Olive Oil
    2 Boneless chicken breasts cut up
    1 clove garlic minced
    1/2 cup chopped onion
    1 cup sweet red pepper cut up
    1 cup sweet yellow pepper cut up
    3 cups Catelli Garden select 6 vegetable pasta sauce (Tomato and Basil)
    1 Tbsp Parlsey
    1/4 cup cooking sherry

Directions

Heat oil in a pan, add chicken. Cook until no longer pink. Add garlic, onion, and peppers and stir until tender crisp. Add to a large casserole dish.
Mix pasta sauce, Parsley, and cooking sherry together and add to meat mixture.
Cover and cook in oven at 350F for 1 hour or until tender
Makes 6 1-cup servings
