Whole wheat blueberry pancakes

Introduction

I found the recipe in my Biggest Loser cookbook, had to make a few changes because I couldnt find the exact flour they listed and I had to make buttermilk cause I forgot to buy it. My non-dieting husband loved these! I found the recipe in my Biggest Loser cookbook, had to make a few changes because I couldnt find the exact flour they listed and I had to make buttermilk cause I forgot to buy it. My non-dieting husband loved these!
Number of Servings: 4

Ingredients

    1 cup whole wheat flour (used King Arthur's Flour Premium Whole Wheat)
    ! cup buttermilk (used 1 cup whole milk and 1 tbsp vinegar)
    2 large egg whites
    1/2 tsp vanilla extract
    1 tsp baking soda
    1/2 tsp salt
    1 cup blueberries, fresh or frozen
    I can't believe it's not butter spray

Directions

Mix all ingredients except blueberries until smooth, then fold in blueberries. Batter was thin but worked. Spray pan with I can't believe it's not butter spray and pour 1/8 cup of batter onto pan. Wait for the bubbles to form and flip them to finish cooking. There were alot of blueberries in the pancakes, maybe a little too many I may use less next time. Will also use low fat buttermilk next time too. Each serving is 4 pancakes, made 4 1/2 servings when I made it.
