4 medium tart apples - chop coarsely for muffins, slice thin for cake
10 packets Splenda
2 tsp cinnamon
2 cups flour
1 1/2 tsp baking soda
1 tsp salt
1/2 cup yogurt (I used 3% for the nutritional info)
1/2 cup applesauce
1/4 cup oil
2 tsp vanilla
1/3 cup nonfat milk (optional)
Mix the egg, yogurt, applesauce, oil and vanilla in a seperate bowl till well blended. Add gently to the dry ingredients, being careful not to overmix.
FOR MUFFINS: Fill muffin pans almost to the very top (like 7/8s full); I got 16 muffins out of this batter. The batter is thick but works fine for muffins - add the milk if you like. (It only adds a few calories) Bake at 350 for 20-25 minutes or until toothpick inserted in centre comes out clean.
FOR CAKE: If you are making the cake, DO add the milk, carefully, and spread evenly over the apples. Sprinkle with cinnamon sugar or skor toffee bits, if you like (not included in the nutritional info). Bake at 350 for 40-50 minutes or until toothpick inserted comes out clean.
