Thai Peanut Slaw

Number of Servings: 6

Ingredients

    3 cups Cabbage, fresh, 3 cup, shredded
    1/2 cup Carrots, raw, grated
    1.5 Tblsp Parsley
    1.5 Tblsp Lime Juice
    1.5 Tblsp Granulated Sugar
    1/2 Tblsp *Fish Sauce
    1/4 cup natural peanut butter
    1/4 cup Peanuts, dry-roasted

Directions

Should make about 6 1/2 to 3/4 cup servings.

Shred the Cabbage and Carrots.
Finely chop the fresh parsley

In another bowl combine the following ingredients until well whisked together.
1.5 Tblsp Parsley
1.5 Tblsp Lime Juice
1.5 Tblsp Granulated Sugar
1/2 Tblsp *Fish Sauce
1/4 cup natural peanut butter

Pour over the cabbage, parsley and carrots.
Allow to site for 30 minutes - add in your 1/4 cup of dry roasted peanutes at the end.

Enjoy.
