Rice Lentil Casserole

Introduction

I've only made this once, and for me it was kind of dry. I suggest tweaking this with some added liquid. I'm going to use the left overs as the "meat" of some chili this week...yum!! Number of Servings: 9

Ingredients

    1.5 cup minute rice dry, cook according to package directions
    1.5 cup dry lentils (cook in 4 cups water for 30 min, drain)
    2 tbsp olive oil
    1 onion chopped
    1 green pepper, chopped
    1 tsp minced garlic
    1 6oz can tomato paste
    1 tsp garlic powder
    1tsp sage
    1 tsp marjoram
    1 tomato, diced
    .5 cup sliced carrots
    2 cups shredded swiss cheese

Directions

Cook Lentils, drain and mash. Cook minute rice. Saute onions, green pepper, carrots and garlic with olive oil until soft. Mix all ingredients together except swiss cheese, and add to greased baking dish. Top with cheese. Bake for 30 min at 350 F.
