Bulgur Tuna Salad

Introduction

A greek-style tuna salad. Easy and very fresh tasting. Great on a hot day. A greek-style tuna salad. Easy and very fresh tasting. Great on a hot day.
Number of Servings: 4

Ingredients

    Olive Oil, 2-3 tbsp
    Oregano, dried, .5 tsp
    Thyme, dried, .25 tsp
    Bulgur, dry, 1.25 cup
    Water, 3 cups
    Feta Cheese, 4 oz
    Tuna, Canned in Water, 10 oz (2 5 oz cans) drained
    Cucumber (with peel), 2.5 cup slices
    Black Olives (preferrably Kalamata), pitted, halved, 1/2 cup
    Grated zest of one lemon OR True Lemon (1 packet),
    Lemon juice, .25 cup, plus more to taste
    Salt & Pepper to taste

    Optional:
    1 cup cherry tomatoes, halved
    .25 cup chopped fresh mint or 1 tsp dried mint (add to the oil)

Directions

Pour olive oil in a small bowl. Crumble in oregano & thyme . Stir and set aside.
Bring water to a boil with 3/4 salt if desired. Add in bulgur. Stir once and then cover and simmer until tender, about 20 minutes. Drain. Rinse under cool water and drain well.
Combine tuna, cucumbers, olives, feta, and bulgur in a bowl. Toss in the oregano-oil, lemon zest & juice. Season to taste.

Makes 4 generous servings.
