Vinaigrette Coleslaw



Introduction

A quick and easy side dish that is an excellent substitution for the higher fat variety. A quick and easy side dish that is an excellent substitution for the higher fat variety.
Number of Servings: 6

Ingredients

    3 tbsp cider vinegar
    2 tbsp sugar
    2 tbsp olive oil
    1/2 tsp celery seed
    1/4 tsp black pepper
    4 cups shredded green and/or red cabbage
    1 cup grated carrot
    1/4 cup sliced green onion

Directions

To make vinaigrette, combine vinegar, sugar, oil, celery seed, and pepper. Mix well.

In large bowl combine cabbage, carrot, and green onion. Pour vinaigrette over vegetables and toss to coat. Cover and chill for several hours before serving.

Makes six 3/4 cup servings.
