Bourbon Chicken

Ingredients

    You’ll Need:

    1 ½ lbs. boneless chicken breasts, cut into bite sized pieces
    ¼ cup cornstarch mixed with ¼ tsp. salt
    2 tblsp. canola oil
    2 minced garlic cloves
    1/3 cup orange juice concentrate
    ½ cup water
    ¼ cup soy sauce
    1 tblsp. apple cider vinegar
    ¼ tsp. minced ginger
    ½ tsp. crushed red pepper flakes
    ¼ cup brown sugar, loosely packed
    1 tblsp. ketchup

Directions

Preparation:

Toss chicken chunks in salted cornstarch until lightly coated. Heat a large skillet over medium-high heat. Once hot, add oil and garlic and stir gently. Add chicken chunks and cook quickly until chicken browns. Remove chicken and set aside. In the same skillet, stir in the rest of the ingredients and bring to a boil. Stir until the brown sugar dissolves. Add chicken back in, reduce heat to low and simmer until chicken is cooked throughout and sauce thickens, about 15 minutes.

Serve over simple white or brown rice, garnished with scallions.

  • This was pretty good! I ended up adding about a cap-full of bourbon to give it an extra kick. I think next time I'd cut back on the OJ (it was a bit too strong for the other flavors) and thicken the sauce a little bit. We like heat so I might add more crushed pepper.   • Great recipe! I made it low salt by omitting the salt with the cornstarch and using a smaller amount of lite soy sauce and it still tastes great! You can also use a canola spray instead of oil with no real difference. This recipes works great cut in half for smaller crowd. - 10/13/07

  • OMG. This is SO delicious! I believe the expression my b/f used after dinner was “I could eat this every night…forever”. You barely need to turn the chicken once added back to the sauce, it just thickens and cooks and takes care of itself. Totally easy. Will absolutely make again. - 10/9/07
