Bean Salad with Cumin

Ingredients

    *Beans, Unico, Bean Medley drained and rinsed
    *Tomatoes - sm cherry tomatoes, chopped
    Cucumber (peeled) and chopped
    *Kraft feta cheese crumbles with oregano, sun died tomatoes and cracked peppercorns
    Parsley, 3 tbsp chopped

    Dressing:
    Garlic, 2 cloves ground, crushed and mixed with salt
    *Salt,
    Freshly squeezed lemon juice
    *cumin seed fried over medium heat for 5 minutes and then ground.
    *100% ITALIAN EXTRA VIRGIN OLIVE OIL, 3 tbsp
    Black pepper to taste

Directions

Combine drained beans, chopped tomatoes & cucmbers, feta cheese and chopped parsley in a bowl.

Dressing: Combine crushed garlic and salt. Add the lemone juice and the toasted/crushed cumin seeds. Whisk all together with oil. Pour over salad.

Makes 4 - 1 cup servings
