Introduction

This cake is kept in the fridge & served cold, so it makes a refreshing summer dessert. I have replaced the oil with yogurt to keep it moist & reduce the calories. This cake is kept in the fridge & served cold, so it makes a refreshing summer dessert. I have replaced the oil with yogurt to keep it moist & reduce the calories.

Ingredients

    Cake:
    1 box lemon cake mix
    1 6oz container lemon fat free yogurt
    1 egg
    1 cup water

    Frosting:
    1 box lemon fat free sugar free pudding mix
    2 cups cool whip light

Directions

1. Mix cake mix , egg, yogurt.& water. Bake according to box
2. Once cake has cooled place in fridge until completely chilled.
3. Mix pudding mix with 2 tbs water. Fold in cool whip.
4. Frost cake with pudding mixture & refrigerate 1 hour
