T's - Mexican Soup

Submitted by: TAMARASART

Introduction

Very tasty and satisfying.

Makes 16 cups of soup so you can determine how much you want - appetizer or for a full meal. I have set this up as 8 servings so I get two cups per meal for work.

Number of Servings: 8

Ingredients

    2 Tblsp Onions, raw chopped
2 cups Chicken stock, home-prepared (can use Shrimp stock or beef stock so you control the sodium.)
4 cups Canned Tomatoes (I use home canned so there isn't as much salt as from the grocery store but have figured out how to enter into the food system yet at sparkpeople to get an accurate nutritional count)
    2 cups Water, tap
4 tsps Penzey's - Ancho Chile Pepper Ground (1/4 tsp serving)
    4 tsps Penzey's - Cajun Seasoning (1/4 tsp serving)
    2 1/2 cups Potato, raw
481 grams fresh zuchini chopped (or about 2.5 cups)
15 ounce can Bush's, Black Beans
18 olives cut in quarters Lindsay - Black Olives Extra Large
10 ounces 93% Lean Ground Beef cooked with below taco seasoning before adding to mixture.
3 Tblsp Penzey's - Bold Taco Seasoning (2 tsp serving)

Directions

Makes 16 cups of soup.

Saute 2 Tblsp of onion in dutch oven or large kettle.

Add
2 cups Chicken stock, home-prepared
4 cups Canned Tomatoes
2 cups Water, tap
4 tsps Penzey's - Ancho Chile Pepper Ground
4 tsps Penzey's - Cajun Seasoning

Once mixture is boiling add in the 2/12 cups of potatoes.
Cook until just soft.

While this is cooking make your meat mixture.
10 ounces 93% Lean Ground Beef cooked with below taco seasoning before adding to mixture.
3 Tblsp Penzey's - Bold Taco Seasoning (2 tsp serving)
Add in about 1/2 a cup of water and cook for about 7-10 mintues and make sure to break up the ground beef. Cook in a microwave and use a pastry cutter to break up the meat.

Add in the zuchini cook until a little crunchy yet.

Dump in the remaining ingredients.
15 ounce can Bush's, Black Beans
18 olives cut in quarters Lindsay - Black Olives Extra Large.

Serve immediately or put in containers and allow to cool in refrigerator before moving over to the freezer.

Enjoy!
