Pistachio Fruit Salad

Introduction

I used pistachios instead of peanuts & omitted the raisins I used pistachios instead of peanuts & omitted the raisins
Number of Servings: 6

Ingredients

    2 cups crushed pineapple
    1 cup peeled, shredded carrots
    1 apple chopped
    1 pear chopped
    3/4 cup pistachios
    1/3 cup plain low fat yogurt
    2 tablespoons peanut butter

Directions

In a large bowl stir together the 1st 5 ingredients.

In another bowl, blend together the yogurt & peanut butter.

Add the yogurt "dressing" to the salad and stir to coat.

Serves 6 1-cup servings

Good source of potassium.
