1 cup cooked bulger
4 large tomatoes; tops cut off and scooped out
(reserve 1/2 cup of tomato pulp and dice)
1/4 cup finely chopped onion
2 tbsp chopped fresh cilantro
1 tbsp lime juice
1/2 pound ground pork
60 grams grated monteray jack cheese
Brown pork in a pan. Add onions and cook until transparent. Remove from heat. In a mixing bowl combine the pork and onions with the bulgur, cilantro, lime juice and the tomato pulp. Stuff mixture into the tomatoes. Place in baking dish and top with cheese.
Bake for approx 30 minutes.
