Vegan Vegetable Sweety

Ingredients

1 large zucchini, sliced
5 roma tomatoes, sliced or chopped
1/3 of a sweet onion
3 garlic cloves, minced
1 tbsp olive oil
Directions
Slice and prepare all vegetables.
When finished, heat oil in a pan on medium heat, and when hot, toss in the onion, and then garlic a little bit later (when the onion begins to turn translucent).
Saute', then add in the rest of the vegetables and cover for 15 minutes, stirring every 5 minutes to prevent sticking. When the zucchini is translucent and the tomatoes have been peeled of their skins by the heat, take off the stove and enjoy!

my mom has always made something very similar to this. . but she adds Italian seasoning to it.. also green peppers.. or any color peppers.. but.. ( she adds the small cut round pepperoni!) delicious!then at the very end, she tops it off with low fat mozzarella cheese, just til it melts! just a bit! - 2/10/09

Yum, this is one of my favorites, in the summer I saute yellow or green squash or both with onion, garlic and red or green peppers with salt, pepper and oregano. In the winter I saute peppers, onion, squash and oregano and add spagetti sauce and pour it over pasta! Very hearty and no need for meat - 2/18/11
