1 1/2 lb zucchini and/or yellow squash
3 Tbsp olive oil
2 Tbsp Italian seasoning
1 clove garlic, minced
1/8 tsp cayenne pepper, or to taste
1/2 tsp salt
1/2 tsp ground black pepper
Slice squash into sticks. Place in large bowl. Combine remaining ingredients in a small bowl. Pour over squash and toss to coat squash thoroughly.
Spread in a single layer on baking sheet. Bake until squash starts to turn golden brown on the edges.
One serving = 3 ounces
