Flax Meal Muffins

Ingredients

    2 cups flax seed meal
    2 tbsp flax seeds
    1 tbsp baking powder
    1 tsp half salt
    2/3 cup splenda
    1 tbsp cinnamon

    1 cup egg substitute
    1/2 cup water
    1/3 cup olive oil
    1 tsp almond extract

    Optional: nuts or berries

Directions

Preheat oven to 350 degrees.

Mix dry ingredients well

Add wet ingredients and combine well

Add batter to lined muffin tins

Bake 20 to 30 minutes, until it springs back
when pressed or until brown
