Bi Bim Bap

Introduction

Korean mixed rice dish, great for a hearty breakfast. This serves two, but I often find one serving to be a little too much. This dish is can be played with in many ways: Use any veggies you like (I generally choose for taste and texture/crunch). You can substitute scrabbled or poached egg for fried. Chicken or pork in place of beef, or just use more mushroom for a meaty texture. To cut the sodium, use Bragg's Liquid Aminos in place of shoyu. Korean mixed rice dish, great for a hearty breakfast. Ingredients

    1 tablespoon reduced-sodium shoyu
    1 tablespoon water
    2 garlic cloves, minced
    chunk of fresh ginger, minced
    1 teaspoon sugar
    3 ounces round steak, sliced very thin
    5 medium fresh shiitake musrooms (or baby bellas, etc.), sliced
    1/2 cup jasmine rice, uncooked
    1/3 cup grated carrot
    1/2 cup mung bean sprouts
    1/4 cup jicama, cut into matchsticks
    1/5 cup shredded red leaf lettuce
    2 eggs
    2 teaspoons red pepper paste
    1 teaspoon sesame oil



Directions

Combine first five ingredients, mixing well. Add beef and mushrooms and alow to marinate.

Prepare rice in rice cooker, or as directed on package if using stove.

Blanch bean sprouts for a minute, then drain and run under cold water. Prep remaining vegetables.

Coat a heavy non-stick skillet with cooking spray. Saute beef and mushrooms along with marinade until cooked through.

Fry eggs.

When rice is finished cooking, scoop half into a bowl. Add, each in it's own section, beef and mushroom, sprouts, carrot, lettuce and jicama. Top with fried egg. Add dallop of red pepper paste, drizzle with seasame oil and serve.

Mix all together before eating.

Note: put the round steak in the freezer for 45 minutes or so to make it easier to slice thinly.
