1 egg and 2 egg whites beaten (can use whole eggs or all egg whites)
1/4 cup chopped of:
green bell pepper
red bell pepper
1/8 cup of:
green onion, chopped
fat-free cheddar cheese, shredded
mozzarella cheese, shredded
a dollop (less than 1 tbsp) of olive oil
Beat eggs then add all other ingredients to eggs. Mix well.
Cook in a small skillet pan. Don't disturb and cook on low if you want an omelette-like structure. Scramble if you want a scramble.
