Lower Calorie Cauliflower-Cheese Soup

Introduction

This smooth creamy soup is an elegant start to a meal or can stand alone. It's chock full of vitamins and calcium, too! This smooth creamy soup is an elegant start to a meal or can stand alone. It's chock full of vitamins and calcium, too!
Number of Servings: 8

Ingredients

    1 med. head cauliflower -- cut into chunks
    2 med. stalks celery -- chopped
    1 t lemon juice
    2 T margarine
    1/4 cup flour
    4 cups water
    2 T. Better than Bouillon chicken base
    2 cups low-fat cheddar cheese
    pepper to taste

Directions

In pot, gently cook cut-up cauliflower and celery in 2 cups water with the lemon juice. Takes about 10 minutes.
When cool enough, puree in a blender until smooth.

In pot, melt margarine, stir in flour, then add chicken broth, whisking until smooth. Cook until thickened and bubbly.

Stir in cheese and milk until cheese is melted.
Add pureed cauliflower mixture and heat.
Add pepper to taste.

Makes 8 one-cup servings. Top each with a little shredded cheese garnish.
