Sun Butter and Banana Streusel Muffins

Introduction

Adapted from the Peanut Butter and Banana muffin found in "The Sugar Solution" cookbook. For those without peanut allergies, you can use peanut butter instead of the sun butter in this recipe. These store nicely in the freezer, pop in microwave on defrost for approx 1 minute and they will be warm like they just came out of the oven! Ingredients

    Streusel:
    3 T. whole grain pastry flour
    3 T. packed brown sugar
    1 T. butter, melted
    1 tsp. honey

    Muffins:
    2 C. whole grain pastry flour
    2 tsp. baking powder
    1 tsp. ground cinnamon
    1/2 tsp. salt
    1/2 C. pureed ripe banana (about 1 medium banana)
    1/2 C. unsweetened applesauce
    1/3 C. Sun Butter
    1/2 C. packed brown sugar
    1 large egg
    3/4 C. skim milk
    1 tsp. vanilla extract

Directions

Preheat oven to 400 degrees. Coat a 12-cup muffin pan with cooking spray. (DO NOT use paper liners!)

To make the streusel: In a small bowl, melt butter. Add flour, brown sugar, and honey. Mix until mixture forms wet crumbs.

To make the muffins: In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. In a large bowl, whisk together the banana, applesauce, sun butter, sugar, and egg until blended. Whisk the milk and vanilla into the banana mixture until combined.

Stir the flour mixture into the banana mixture with a spoon, just until blended. Do not over mix. Spoon the batter into prepared muffin cups, dividing equally. Crumble the streusel mixture on top of the muffin batter, dividing evenly.

Bake for 16-18 minutes, or until a wooden pick inserted in the center of muffin comes out clean. Remove from pan. Best served warm.
