Italian Beef Salad

A delicious, light, refreshing meal that's perfect for a hot summer day. It's got plenty of veggies and protein to keep you fueled, without making you feel too stuffed. It's got plenty of veggies and protein to keep you fueled, without making you feel too stuffed. Plus, it doesn't require a stove!
Number of Servings: 4

Ingredients

    1/2 lb. deli roast beef, cut into 1/2-in. wide strips
    3 cups mesclun greens
    1 cup broccoli florets, cut into bite-size chunks
    2/3 cup grape or cherry tomatoes, halved
    2 scallions, thinly sliced
    3 tbsp. Parmesan cheese
    2 tbsp. olive oil
    Juice of one lemon
    Ground black pepper
    Kosher salt, to taste
    1 tbsp. capers, optional

Directions

~Arrange the mixed greens on a large platter and arrange broccoli on top of the greens in a ring.
~Drizzle one tablespoon of oil over the greens, followed by 1/2 of the lemon juice.
~Sprinkle with salt and pepper, to taste
~Place the roast beef strips inside of the broccoli ring, and drizzle again with the remaining oil and lemon juice. Add more salt and pepper, if desired
~Sprinkle the parmesan cheese over the salad, and finally top the whole thing with the chopped tomatoes.

Serve to your adoring fans along with crusty bread and a delicious, cold drink!
