Ingredients

    One bell pepper sliced
    two medium carrots sliced
    a handful of green beans with ends, strings removed and cut into bite sized pieces
    one shallot sliced thin
    a third cup of frozen corn, allowed to thaw
    a third cup of frozen peas, allowed to thaw
    a large tomato or one cup diced
    two table spoons oil
    one packet of Peacock spice company's Vegetable Jalfrezi spice mix

Directions

Makes 4 servings of approximately one cup
slice the vegetables, add the frozen vegetables and when thawed saute them in the olive oil almost to desired tenderness. Add the spice packet and mix well. Let cook another 5-10 minutes until to desired tenderness level.
