Introduction

Ingredients

    Blueberry Muffins (Makes 6)
    1 cup flour 1 egg
    1 1/2 tsp baking powder 1/2 Cup 1% milk
    1/4 tsp Kosher salt 1/2 tsp vanilla extract
    1 1/2 tbsp sugar 1 1/2 tbsp corn oil
    1/4 tsp mace
    1 tsp orange peel (finely chopped)
    3/4 cup fresh washed & dryed blueberries
    Strawberry Muffins Makes 6
    1 cup flour 1 egg
    1 1/2 tsp baking powder 1/2 Cup 1% milk
    1/4 tsp Kosher salt 1/2 tsp vanilla extract
    1 1/2 tbsp sugar 1 1/2 tbsp corn oil
    1/2 tsp cinnamon
    3/4 cup chopped strawberries
    1 tsp orange peel (finely chopped)

Directions

Grease muffin cups with Pam cooking spray. Sift flour with dry ingredients (sugar, salt, mace or cinnamon, orange peel & fruit-either strawberries or blueberries). Measure milk, add egg & beat lightly then stir in vanilla & oil. Add to dry ingredients. Mix just until dry ingredients are moistened. Spoon into muffin cups & bake in 425 F oven 20 minutes.
