Italian Sausage and Broccoli Pasta

Number of Servings: 8


    12 oz. dried wheat Rotini (or other shaped pasta)
    1 lb. Sweet Italian sausage, without casing
    Olive oil
    2 tbsp crushed red pepper
    1 tbsp. oregano
    1 cup of white wine
    2 tbsp. of margarine
    1/4 cup parmesan cheese
    1 head of broccoli, chopped and steamed


Put on a pot to boil pasta. Cook pasta to al dente, drain, and set aside.

Heat olive oil in a pan and add the sausage when hot, breaking it up with a wooden spoon.

Fry for a few minutes and add the crushed red pepper. Continue frying until the meat is all browned.

Add oregano and white wine and let half of the wine boil away. Turn down the heat and stir in broccoli.

Toss pasta with the sauce in your pan. Add parmesan and butter and mix until everything’s evenly distributed on the pasta.

Serve with some more parmesan and parsley.
