Introduction

This makes a huge amount - you could try to halve it to make less, but I always forget to use fewer strawberries and end up with too much liquid from the puree! Number of Servings: 64

Ingredients

    1 stick (4 oz) unsalted butter
    1 pkg (8 oz) low-fat cream cheese (Neufchatel)
    5 strawberries, pureed
    1 tsp vanilla extract
    1 bag (2 lbs) powdered sugar

Directions

Place butter & cream cheese into a large mixing bowl and allow to come to room temperature.

Once warmed, beat with hand mixer until creamy and smooth. Add puree and vanilla and mix to incorporate.

Add about 1 cup at a time of sugar, mixing well each time, until you reach desired consistency.

Serving size is 1 TB. This recipe makes about 4 cups, or 32 oz, which is 64 tablespoons.
