Lightened Carrot Cake!

Number of Servings: 16

Ingredients

    1.5 c flour
    .66 c splenda
    .5 c coconut flakes
    .33 c walnuts chopped
    2 tsp baking soda
    2 tsp ground cinnamon
    2 eggs
    1.5 c drained crushed pineapple
    3 tbsp olive oil

Directions

Combine dry ingredients with spoon. Stir eggs and olive well to combine; add to dry mixture. Add pineapple & carrot. Mix with handheld mixer until just combined. Pour into 13" x 9" baking pan (with cooking spray if not non-stick). Bake for 35 min at 350 or until clean with wooden toothpick.
