Ingredients

For Peach filling:
3 pounds fresh peaches, peeled and sliced
1 Tbsp. cornstarch
1 Tbsp Splenda
1 Tbsp sugar
1 tbsp crystallized ginger, chopped
juice of 1/2 lemon
For biscuit topping
3 cups all purpose flour, or use a white whole wheat flour blend
1 tsp salt
1 tbsp baking powder
1 cup lowfat milk or buttermilk
4 tbsp shortening, chilled
Directions
Makes about 9 servings
Preheat oven to 400 degrees
Mix the peaches, Splenda, sugar, cornstarch and lemon juice in a deep dish pie dish. Place the dish on a baking sheet (to catch drips) and bake this filling for about 20 minutes, or until the peaches are just barely tender. In the meantime, prepare the biscuit dough. Whisk the flour, sugar, salt, and baking powder together in a large bowl. Cut in the shortening until the mixture resembles coarse meal. Add the buttermilk or milk, and stir just until the mixture comes together. Add more liquid if necessary. Turn out onto a floured surface, and knead gently 4 or 5 times. Pat out into a round about 1/2 inch thick. Cut into biscuit rounds with a 2 1/4 inch biscuit cutter. You should be able to get at least 9 biscuits. When the filling comes out of the oven, place the biscuits on top, slightly overlapping, with one in the center. place the dish with the baking sheet under it back in the oven. Bake at 400 degrees for about 30-40 minutes. Let cool for at least 30 minutes before serving.
