Creamy Farfalle with Wild Mushrooms

Introduction

I adapted this recipe from a cooking light recipe to make it more healthy and now its actually much tastier than the original! Makes 8 one cup side servings (that is what the nutrition info is for) or 4 two cup main dish servings. Ingredients

    10 oz Farfalle Pasta
    8 oz package of sliced portabella mushrooms
    4 oz package of shiitake mushshrooms
    1.5 cups sliced white button mushrooms
    cooking spray
    1/3 cup shallot chopped
    1/2 cup onion chopped
    2 large cloves of garlic minced
    1/2 cup grated parmesan cheese
    2/3 cup fat free half and half
    1/4 cup white wine
    1.5 tsp salt divided
    pepper to taste
    2 tbsp chopped parsley


Directions

First cook the pasta according to the package directions and set aside. Meanwhile chop the garlic and onions, remove the stems from the shiitake mushrooms and slice. Heat a large skillet coated in cooking spray over medium heat. Add mushrooms, onions, shallots, garlic, and 1 tsp salt to skillet and cook until liquid evaporates (about 15 minutes) add the wine and cook until the wine is absorbed, 3-5 min. Combine parmesan cheese, half and half, pasta, mushroom mixture, parsley, remaining salt and pepper to taste in a large bowl. Stir until well mixed, serve.

Makes 8 1 cup side servings (or 4 2 cup entree portions)
