1/2 c sugar 2 8 oz cream cheese, softened 1/4 cup heavy whipping cream 1/2 tsp vanilla 2 Tbsp fresh lime juice 1 tsp grated lime peel 2 eggs 1 graham cracker pie crust
Preheat oven to 350, Beat cream cheese, whipping cream, sugar, lime peel, lime juice and vanilla with electric mixer on medium speed until well blended. Add eggs, one at a time; mix just unitl blended. Pour mixture evenly into graham cracker crust. Bake for 40 minutes or until center is almost set. Refrigerate for 4 hours or overnight.
