I serve this tasty treat as a side-salad but it can also be warmed and served as a side-dish or served in a pita or wrap. I serve this tasty treat as a side-salad but it can also be warmed and served as a side-dish or served in a pita or wrap.

Ingredients

    Garlic powder, 1 tsp
    Salt, 1 tsp
    Chili powder, 1 tbsp
    Paprika, 1 tsp
    Ground Cumin seed, 1 tsp
    Jalapeno Peppers, 1 pepper, finely chopped
    Olive Oil, 1 tbsp
    Imagine Organic, No-Chicken Broth, .75 cup
    Onions, raw, .25 cup, chopped
    Black Olives, 1 small can (2.25 oz)
    Peppers, sweet, red, raw, diced, .5 cup
    Yellow Sweet Corn, Frozen, 1 cup kernels
    Lime Juice, 1 Tbs
    *Brown Rice, long grain, 2.5 cup
    Beans, red kidney, 2.5 cup

Directions

Precook beans and rice and cool before mixing salad.
Mix spices and liquids together and set aside.
Toss beans, rice and remaining ingredients together, mixing thoroughly.
Stir in spice and liquid mixture. Refrigerate for 1+ hours to marry seasons.

Makes approximately 14, 1/2 cup servings.
