Peach Blueberry Crisp

Ingredients

    6 medium sliced fresh peaches
    1 cup blueberries
    2 tablespoons splenda
    1 tablespoon quick-cooking tapioca
    2/3 cup quick-cooking rolled oats
    2 tablespoons whole wheat flour
    2 tablespoons packed brown sugar
    1/2 teaspoon ground cinnamon
    2 tablespoons butter

Directions

1. Preheat oven to 375 degrees F. For fruit filling: In a large bowl, combine peach slices, granulated sugar, tapioca, and blueberries. Place fruit mixture in a 2-quart square baking dish.
2. For topping: In a medium bowl, combine oats, whole wheat flour, brown sugar, and cinnamon. Using a pastry blender, cut in butter until crumbly. Sprinkle topping over fruit.
3. Bake for 45 to 50 minutes or until bubbly. Cool on a wire rack for 45 minutes; serve warm. If desired, serve with vanilla yogurt. or ice cream
