Introduction

This makes 4 spring rolls. They are super fresh and delicious. Its easy to make a lot more at a time too. They will keep over night but not much longer, taste best if they're ate the same day.

This makes 4 spring rolls. They are super fresh and delicious. Its easy to make a lot more at a time too. They will keep over night but not much longer, taste best if they're ate the same day.

Number of Servings: 4

Ingredients

    4 pieces rice paper (round)
    1/2 cup cooked rice noodles
    1/3 cup chopped raw carrots - julienne or matchstick
    1/3 cup chopped peeled cucumbers julienne
    1 tsp chopped fresh mint

Directions

Chop up veggies and cook the rice noodles. Rinse rice noodles with cold water.

Prepare rice paper according to package. Usually dip in warm water for 5-10 seconds. Place noodles and veg in the middle, sprinkle with a little mint and roll.

These taste amazing with a Peanut sauce. I also have that recipe on this website. Calories for these spring rolls do not include sauce.
