IntroductionReally nice for summer meal or side dish. Really nice for summer meal or side dish.
2 cups water
1 cup quinoa
1 pinch salt
quarter cup olive oil
half tsp sea salt
quarter cup lemon juice
3 tomatoes diced
1 cucumber diced
1 bunch green onions diced (scallions)
2 carrots grated
1 cup fresh parsley chopped
In a large bowl combine tomatoes, cucumber, green onions (scallions), carrots and parsley. In a small bowl combine olive oil, sea salt, and lemon juice and beat with fork to emulsify. Stir in dressing to the vegetables, and athen add and toss with cooled quinoa.

Thanks for this recipe. I have been looking for ways to use Quinoa ever since I came back from Peru where it is a staple in the diet. But I was really clueless since I wasn't cooking there. - 7/9/10
